Ingredients:
5 Eggs
1 tsp Red Chilli pwd
1 tsp Coriander pwd
1 tsp jeera/cumin pwd
1 tsp kasoori methi
1/2 tsp turmeric
1/2 tsp garam masala
1/4 cup finely chopped fresh Coriander
1 tbsp Curd
2 tbsps of oil
Salt to taste
Blend to a smooth paste (a):
1 medium onion ,a medium piece of ginger,1 tbsp Curd, 4-5 loves of garlic, 1 small stick of cinnamon, 1 clove, 2 cardamoms.
Blend to a smooth paste (b):
2 small tomatoes & 1 tbsp of cashewnuts.
Method:
Hard boil the eggs, shell them & make slits on each egg with a thin knife & set aside. Heat oil & fry the sliced onions. When it starts turning brown, add the ground onion paste & fry until the oil starts leaving the edges. Add the tomato paste & fry till raw smell goes. Now add the red chilli pwd, Coriander pwd, Jeera pwd, Turmeric & fry for a min. Remove from heat, add the eggs n mix carefully without breaking the eggs & thoroughly coating each egg with the masala. Add Curd, salt, enough water for the gravy & put back on fire & cook covered for about 3-4 mins. Now add the garam masala powder & kasoori methi & heat through for a min. Garnish with fresh coriander leaves & serve with Phulkas or plain rice.
