Ingredients:
Cooked Rice - 1 bowl
Fresh Methi leaves - 1 bunch Green Chillies - 6
Clove - 2
Cardamom - 2
Cinnamon - 1
Ginger-Garlic paste - 1 tsp
Onion - 1 big, finely sliced
Salt to taste
Oil - 4 tbsps
Potato - 1 big cut into bite-sized cubes
Capsicum - 1 big cut into same size as potato
Garam Masala - 2 tsps
juice of half a lemon.
Method:
Chop & wash the Methi leaves & keep aside. Heat oil in a pan, add the cloves, cardamom, cinnamon & green chillies. Once they splutter add the ginger-garlic paste, onions & fry until golden brown. Now add the Capsicum & potatoes fry for a min & cover cook until the potatoes are soft. Now add the Methi leaves & fry until the water content dries off. Add salt, Garam Masala & lemon juice & mix well. Remove from heat, add the cooked rice & mix well. Garnish with fried cashews & serve along with any Raitas.
Note: You can omit the potatoes & Capsicum & use green peas instead or just use the Methi leaves alone.
