South Indian Sambhar!!!

A mixture of dals, veggies or greens or sprouts & a bit of masala is what makes the sambhar!!!

Ingredients:

Sambhar pwd - 3 tbsps
Fresh coconut gratings (Thengina Thuri) - 2 tbsps
Tamarind extract (Hunase Rasa) - 1 tbsp
Salt to taste
Jaggery (Bella) - 1 tsp
Toovar Dal (Thogari bele) - 1 cup
Veggies/Greens/Sprouts - 1 cup
Turmeric - 1tsp
Tomato - 2 medium, chopped (optional)
Onion - 2 medium, chopped (optional)

For the seasoning (Ogarane) -
Mustard - 1 tsp
Hing - 1/2 tsp
Curry leaves - 1 strand

Method:
Wash the Toovar Dal properly & cook until soft in a pressure cooker along with the veggies/greens/sprouts, Turmeric, tomato & required amount of water. 3-4 whistles would be fine. In the meantime grind the fresh coconut grating & sambhar pwd together into a fine paste. Add the masala paste to the cooked Dal & veggies along with Tamarind extract, salt,Jaggery & bring it to a boil stirring it between. Let it boil for 10 mins so that the raw smell of the masala goes. Remove from heat & add a seasoning of oil, mustard, Hing & curry leaves & serve hot with white rice along with a spoon of ghee on top.

Note: Please adjust the spiciness according to taste. If using veggies like ladies finger then instead of cooking along with Dal fry it with a little bit of oil so that the stickiness goes & add it to the sambhar after it comes to a boil.
