Aloo Methi Paratha!!!

Finger licking good!!!

Ingredients:

Wheat flour - 2 cups
Potato (boiled & peeled) - 3
Methi leaves/Menthya soppu/ Fenugreek leaves - 3 bunches
Onion - 1 big (finely chopped)
Red chilli pwd - 1 tsp
Garam Masala - 1 tsp
Dhania pwd - 1/2 tsp
Jeera pwd - 1/2 tsp
Salt to taste
Oil/Butter - 4 tbsps

Method:

Mash the potatoes & keep aside.  Mix the wheat flour, salt, a tbsp of oil/Butter & mix well. Add the required amount of water to make firm dough. Cover with a damp cloth & keep aside.

Now in a pan heat oil/Butter add the onion & fry until golden brown.
Add the chopped Methi leaves & fry until the water evaporates.  Add salt & the dry masalas & mashed potato to the onion & mix well. Lastly add a dash of lemon juice & mix well. 

Now make small balls of the prepared dough & roll into small puris, place the filling inside & cover it.  Roll it flat again but a bit thick.  Heat a tava place the paratha on the tava & cook. Smear oil/butter on the paratha & serve hot along with curd & Pickle.
