Kayi Rubida Chitranna!!!

One of my personal favourites... I give this rice a few different twists whenever I'm bored to eat the normal Chitranna!!! 

On a normal day I would add onions, ginger & garlic, but if cooking on a festival I would replace them with capsicum & green peas!!!

Ingredients:

White Rice (cooked) - 1 bowl
Fresh Coconut gratings - 4 tbsps
Green Chillies - 6
Turmeric - 1 tsp
Fresh Coriander - handful
Ginger - 1 inch (optional)
Garlic - 5 pods (optional)
Jeera - 1 tsp (optional)
White Til/Billi Yellu - 1 tsp (optional)
Onions (chopped) - 2 (optional)
Mustard - 1 tsp
Curry leaves - 1 sprig
Ground nuts - 2 tsps
Cashews - 1 tsp (optional)
Channa Dal/Kadale Bele - 1 tsp
Urad Dal/Uddina Bele - 1 tsp
Salt to taste
Juice of half a lemon
Oil - 2 tbsps

Method:

Make a coarse paste of ginger, garlic, coconut, green Chillies, fresh Coriander, Turmeric, white Til & Jeera without adding water.

In a pan heat oil, add mustard, Channa Dal, Urad Dal, Ground nuts, Cashews & fry until golden brown.  Add curry leaves, onions & fry until the onions are translucent. Now add the ground paste, fry until the raw smell goes & remove from heat.  Add the cooked rice, lemon juice, salt, fresh coriander & mix well.

Serve hot along with any Raitha if needed.
